Cauliflower “Rice” with Peas
1 large head of organic cauliflower
½ cup frozen green peas
1 TBSP pastured butter
¼ cup water or broth
- Cut the cauliflower up into florets.
- Put the florets in a food processor (a few at a time for best results) and process until it looks like rice.
- Transfer to a pot and add the rest of the ingredients.
- Cook until heated through and water has been absorbed.
- Serve with any food you would normally use rice. Particularly good with Indian and Asian dishes.
