21 Day Cleanse Approved Vegetable Lentil Soup
*Always buy fresh, organic ingredients when available, otherwise you’ll be adding unwanted ingredients to your dish! Frozen is OK if you’re in a bind, but canned is never a good idea.
- 32 ounces organic vegetable broth
2 cups water or vegetable broth
1 large zucchini (chopped)
1 large yellow squash (chopped)
1 large yellow onion (diced)
1 tbsp chopped garlic
1 head of broccoli with the florets separated into bite size pieces
1/2 head of cauliflower with the florets separated into bite size pieces
2 large handfuls of lentils
2 large carrots (chopped)
1 large handful of green beans
1 jar of Jovial Foods diced tomatoes
1 small jar tomato paste
1 tsp Italian seasoning
Salt and pepper to taste
In large stock pot, sauté the onion, garlic and seasonings in olive oil until onion is clear.
All vegetables to the pot and sauté for 1 minute.
Pour in the vegetable broth and water and stir.
Once the mixture starts to boil, add the lentils, tomatoes and tomato paste. Mix thoroughly.
Bring to a boil and reduce heat to medium-low and let cook for 30 minutes.
